Using Chia Seeds as an Alternative to Eggs in Baking

Many people have some type of an allergic reaction to consuming dairy products and/or chooses not to consume anything that has dairy. As a result, many are trying different ways of replacing dairy products, even with baking goods. One way of replacing eggs are to use chia seeds. In order to process chia seeds, follow these steps:



  1. Using a food processor, grind 2 tablespoons of chia seeds until it turns into a ground meal. (Grind as much as needed). One cup of seeds is equivalent to about 1 1/3 cups of meal.
  2. Mix the grounded seed meal with 3 tablespoons of water or other liquid, which should be at room temperature or just plain warm. It should sit for approximately between 5 and 10 minutes--it will turn into a thick gel, the thick stuff that you will see in a raw egg. This will act as a bonding force when it is pulled together with heat.
  3. Add it in your baking goods as you would with eggs.
