The Basic Vanilla Cupcakes Recipe

In the previous post, I promised that I was going to post a cupcake recipe----well, here it is!

Basic Vanilla Cupcakes with Cake Decoration and Icing



Basic Vanilla Cupcakes

Yield: 12 Cupcakes

Ingredients:

1/3 cup All-Purpose Flour, Gluten-free
3/4 teaspoon baking powder
1 teaspoon sea salt
1 stick unsalted butter, at room temperature (alternatively you can use 8 tablespoons of applesauce if you want dairy-free)
3/4 cup granulated sugar
2 large eggs, at room temperature (alternatively you can use chia seeds, 2 tablespoons chia seeds and 2/3 cup water, dairy-free)-click on the word chia for directions on how to use chia seeds to replace eggs in baking.
3 teaspoons vanilla extract
6 tablespoons whole milk (in place of whole milk, you can use almond milk)
Rainbow Sprinkles (optional, only if you want to use some type of frosting on your cake)


Instructions:
  1. Preheat your oven to 350 degrees Fahrenheit and put the rack in the upper center. Mix together the flour, baking powder and the sea salt in a medium-sized bowl. Set aside
  2. Beat the butter (or its alternative) and sugar on medium-high in a mixer; scrape the sides of the bowl as needed. Do this until the mixture becomes light and fluffy, for approximately 3 minutes. Add eggs (or its alternative) and vanilla extract and beat until fully incorporated.
  3. With the mixture that you created in 2, add half the flour mixture, the milk, and the rest of the flour mixture--your mixer should be on low speed.
  4. Line a 12-cup cupcake pan with paper liners or foil liners. Fill each of the liner 3/4 of the way with batter.
  5. Bake, turning the pan at a 180 degree angle after 15 minutes, until a toothpick is inserted into the center, making sure that the cupcake comes out clean. Remove and place on a cooling rack. Let them become completely cool.
  6. If desired, spread each cupcake with frosting of your choice, using an offset spatula or butter knife. Top with rainbow sprinkles or other cake decorations.

Beginning an Online Cupcake Catering Business

Homemade Vanilla Cupcakes

I haven't post anything in a few days due to the fact that I am in the process of focusing on starting my own online cupcake catering business. While doing this, my main blog post will focus mainly of cupcakes, how to start a cupcake business, and recipes. But, anyway, I created this batch of vanilla cupcakes from scratch, using a basic vanilla cupcake recipe. (I tweaked it quite a bit to suit my unique recipes, as in using sea salt and almond soy milk.) I will post my Vanilla Cupcake recipe in the next post.

The cupcake tasting turned out to be a great success! I am very happy about its success!

The Perfect Morning Breakfast


I broke away from the cereal regimen and decided to get up and cook some French toast along with maple syrup and some melted butter. That made my breakfast day!

Amarula Drink

African Brew Drink
If you have not heard of this wonderful cream liqueur, then you will be in for a real treat. The Amarula drink is what I am talking about. This drink comes from South Africa and it is made with sugar, cream and the fruit that comes from the African marula tree. (No wonder the elephants love the fruit!) The drink has finally caught on in the States.

There are various cocktails and drinks that can be created from this chocolately, yet fruity-like liqueur, such as the African Brew, which is made from the Amarula cream, chocolate ice cream, banana and ice. The alcohol content is 17% by volume, therefore not a lot of alcohol content (still drink responsibly!) 

It has this very creamy and light brown color (the amarula cream itself!). At the same time, it has the aroma of milk chocolate and vanilla mixed with fruit and nut. It is sweet, but not to the point where you want to scream "Stomachache!" 

My recommendation for Amarula Cream Drink: once you try it and drink it, you will not have any regrets. By the way, this drink will cost you around $20.

Caramelized Sausage Cakes
Although bacon is the dominant meat in my breakfast routine, I decided to dump the bacon just for a minute for my other breakfast friend, the sausage cake. The sweet, maple aroma had spoken to me--I just couldn't resist those round cakes with caramelized edges along with juices dripping along the sides and (everywhere else).

Anyone that is very hungry and craving for this tasty and juicy piece of meat, this is a treat (and cure) for you!

For lunch, I decided on something just little bit different from the usual. I wanted to give my appetite a rest from consuming Elsie--I went the healthier route---the Veggie Burger, with soybeans and carrots, just to name a few of the components of this burger.

At any rate, it was delish! Couldn't ask for a better lunch!

Now let's see what else can I sink my teeth and/or lips on!

As a sweet tooth, (I don't overdo it!) I just can't help myself to sweets, especially pastries. Cheesecake is my guilty pleasure! I gathered my cheesecake, which came in a variety of flavors: plain, with strawberry syrup, and chocolate with some white chocolate chips.

Looks pretty indulging, right? It sure does that I just want to sink my teeth into it!
